So what's your processing procedure or plan Dale? Doing it your self or processor? What cuts? Any black and blue sticks?

I'll do it myself.
Will pull the back straps and tenderloins.
The T loins will be on the grill buy this weekend.
Possibly the heart will be in a day or so.
The rest will get boned out and Black and Blue sticks.
Possibly some summer sausage too.
As far as pictures, I don't know if my wife will be up to that. We'll see.
She did watch me field dress it.
